Description

Hobo Casserole Ground Beef is a hearty and comforting meal that combines savory ground beef, tender vegetables, creamy mushroom soup, and a crispy tater tot topping. Ready in under an hour, this casserole is perfect for busy weeknights, offering a family-friendly, all-in-one dish that satisfies with balanced flavors and textures.

Ingredients

Scale

Meat and Vegetables

  • 1 lb ground beef
  • 1 small onion, chopped
  • 1 can (14.5 oz) green beans, drained

Binding and Toppings

  • 1 can (10.5 oz) cream of mushroom soup
  • 2 cups shredded cheddar cheese
  • 1 bag (about 32 oz) frozen tater tots
  • 1 cup French fried onions

Seasonings

  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Brown the Ground Beef and Onions: In a large skillet over medium heat, cook the ground beef and chopped onions until the meat is browned and the onions are softened, about 5-7 minutes. Drain excess fat to keep the dish from being greasy.
  2. Mix in Vegetables and Soup: Stir in the green beans and cream of mushroom soup until everything is combined evenly, creating a rich and creamy base for the casserole.
  3. Layer in the Casserole Dish: Spread the beef mixture evenly in the bottom of a greased casserole dish. Sprinkle shredded cheddar cheese evenly over the beef mixture to melt throughout the casserole.
  4. Add the Tater Tot Topping: Arrange frozen tater tots in a single layer on top of the cheese. This layer will bake into a crispy, golden crust.
  5. Bake Until Golden and Bubbling: Bake the casserole at 375°F (190°C) for 30-35 minutes or until the tater tots are golden and the filling is hot and bubbling. For extra crunch, sprinkle French fried onions on top during the last 5 minutes of baking.

Notes

  • Drain fat well to prevent greasiness and enhance flavor.
  • Use fresh green beans and quality cheese for better taste.
  • Distribute layers evenly to ensure balanced flavors in each bite.
  • Let the casserole rest 5-10 minutes after baking to set for easier serving.
  • French fried onions can be swapped for crushed crackers or breadcrumbs for different textures.
