Ingredients

Scale

Vanilla Cake Ingredients

  • Vanilla cake mix or ingredients for a vanilla sponge cake (typically includes flour, sugar, eggs, butter, baking powder)
  • Eggs (as required by cake recipe)
  • Butter (as required by cake recipe)
  • Vanilla extract (as required by cake recipe)

Pastry Cream Ingredients

  • 2 cups whole milk
  • 3/4 cup granulated sugar
  • 2 tablespoons cornstarch (or all-purpose flour as thickener)
  • 4 large egg yolks
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract

Chocolate Ganache Ingredients

  • 1 cup heavy cream
  • 8 ounces high-quality semi-sweet or bittersweet chocolate, chopped

Instructions

  1. Prepare the Vanilla Cake Layers: Mix your cake ingredients until smooth and creamy. Divide the batter evenly into greased round pans. Bake at 350°F (175°C) for 25 to 30 minutes or until a toothpick comes out clean. Allow the cakes to cool completely before assembling.
  2. Make the Pastry Cream: In a saucepan, combine milk, sugar, and vanilla extract. Warm slowly until just boiling. In a separate bowl, whisk egg yolks with cornstarch until smooth. Slowly pour the hot milk mixture into the egg yolks while whisking constantly to avoid curdling. Return the mixture to the stove and cook over medium heat until thick and glossy. Remove from heat and stir in butter until smooth. Chill completely in the refrigerator.
  3. Prepare the Chocolate Ganache: Heat heavy cream until just simmering. Pour it over chopped chocolate in a bowl. Let sit for 1 minute, then stir gently until smooth and shiny. Allow to cool slightly but remain pourable.
  4. Assemble the Boston Cream Pie: Place one cooled cake layer on a serving plate. Spread an even layer of chilled pastry cream on top. Gently place the second cake layer over the cream. Pour the chocolate ganache over the top, letting it drip down the sides. Chill briefly to set the ganache before serving.

Notes

  • Use room temperature eggs and butter for smooth batter and custard.
  • Whisk pastry cream constantly while cooking to prevent lumps.
  • Chill cake layers and custard well before assembling for clean layering.
  • Pour ganache when slightly cooled but still pourable for a glossy finish.
  • Slice cake with a serrated knife to avoid crumbling.
