Description

Discover the rich, creamy delight of Chocolate Ganache Tart—an irresistible dessert featuring a silky smooth ganache filling atop a crisp, tender buttery crust. Perfect for celebrations or everyday indulgence, this tart combines intense chocolate flavor with elegant presentation and versatile customization options.

Ingredients

Scale

Tart Crust

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 7 tablespoons cold unsalted butter, cut into pieces
  • 1 large egg yolk
  • 1 teaspoon vanilla extract

Ganache Filling

  • 8 ounces high-quality dark or semi-sweet chocolate, chopped
  • 3/4 cup heavy cream
  • 1 tablespoon unsalted butter (optional, for extra sheen)

Instructions

  1. Prepare the Tart Crust: Begin by mixing the flour, sugar, and cold butter until you achieve a crumbly texture. Then add the egg yolk and vanilla extract to bind the dough. Press it evenly into a tart pan, and chill it for at least 30 minutes before baking to ensure a crisp, sturdy shell.
  2. Blind Bake the Crust: Line the chilled crust with parchment paper and fill with pie weights or dried beans. Bake at 350°F (175°C) for about 15 minutes until the edges turn golden. Remove the weights and bake for another 5-7 minutes to finish crisping the base. Let it cool completely.
  3. Make the Ganache Filling: Heat the heavy cream gently until it starts to simmer, then pour it over the chopped chocolate in a bowl. Let it sit for a couple of minutes to melt, then stir until silky and smooth with no lumps. Add a bit of butter for extra sheen and richness, if desired.
  4. Assemble the Tart: Pour the ganache into the cooled crust and smooth the top evenly. Refrigerate for at least two hours or until the ganache sets firmly. This resting time allows the flavors to meld beautifully.
  5. Garnish and Serve: Add your favorite toppings like fresh berries, a sprinkle of sea salt, or edible gold flakes. Slice with a warm knife for clean pieces and serve chilled or at room temperature for maximum delight.

Notes

  • Use quality chocolate: The better the chocolate, the richer and smoother your ganache will be.
  • Don’t overheat the cream: Warm cream just to a simmer to avoid burning or curdling the ganache.
  • Chill the dough well: Keeping your crust cold prevents shrinking and helps maintain flakiness.
  • Let ganache set fully: Patience is key—wait for at least two hours in the fridge for the best texture.
  • Warm your knife before slicing: Dip a sharp knife in hot water and dry it before cutting for cleaner slices.
