Ingredients

Scale

Main Ingredients

  • 4 Large Flour Tortillas (soft and fresh)
  • 6 Fresh Eggs
  • 1 cup Cheddar or Monterey Jack Cheese, shredded
  • 6 slices Crispy Bacon or 8 oz Sausage, cooked
  • 1 cup Bell Peppers, chopped
  • 1 cup Onions, chopped
  • 1 cup Black Beans or Refried Beans, drained and rinsed
  • 1/2 cup Fresh Salsa or Pico de Gallo
  • 1 Avocado or 1/2 cup Guacamole
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1/2 teaspoon Chili Powder
  • Salt and Pepper, to taste
  • 1 tablespoon Oil (for sautéing)

Instructions

  1. Prepare the Ingredients: Chop the bell peppers and onions. Cook the bacon or sausage until crispy. Beat the eggs lightly with a pinch of salt and pepper. Having all ingredients ready sets the stage for smooth assembly.
  2. Sauté Vegetables: In a medium skillet over medium heat, heat the oil and sauté the chopped onions and bell peppers until tender and slightly caramelized, which brings out natural sweetness and texture.
  3. Scramble the Eggs: Push the veggies to one side of the skillet, pour in the beaten eggs, and gently scramble them until just set but still moist for a perfect creamy texture.
  4. Warm the Tortillas: Warm your flour tortillas in a dry skillet or microwave for a few seconds to make them pliable and easy to roll without cracking.
  5. Assemble the Burrito: Lay a tortilla flat, then layer scrambled eggs and sautéed veggies, crispy bacon or sausage, beans, shredded cheese, avocado or guacamole, and a spoonful of salsa in the center. Fold the sides in and roll tightly to keep all fillings secure.
  6. Optional Crisping: Place the rolled burrito seam-side down into a hot skillet for 1–2 minutes to seal the burrito and add a golden, crispy finish.

Notes

  • Use Fresh Ingredients: Fresh eggs and crisp vegetables enhance flavor and texture.
  • Don’t Overcook Eggs: Keep scrambled eggs soft and slightly creamy to avoid dryness.
  • Warm Tortillas Properly: Warming prevents cracking and eases folding.
  • Season Every Layer: Lightly season beans, veggies, and eggs to build layered flavors.
  • Wrap Tightly: A snug roll keeps fillings inside and prevents the burrito from falling apart.
