- Let the dough rise: Place the dough in a lightly oiled bowl and cover with a kitchen towel. Allow it to rise in a warm spot until doubled in size, approximately 60 minutes.
- Shape the pretzel bites: Punch down the risen dough and roll it into long ropes about ½ inch thick. Cut the ropes into bite-sized pieces and set aside.
- Boil with baking soda: Bring 10 cups of water to a boil and carefully add 2/3 cup baking soda. Boil the pretzel bites in batches for about 30 seconds. Remove with a slotted spoon and place on a parchment-lined baking sheet.
- Bake and butter them: Bake the pretzel bites in a preheated oven at 425°F (220°C) until golden and puffed, about 12-15 minutes. Immediately after baking, brush the bites generously with melted butter and sprinkle coarse sea salt on top.
