- 2 chicken breasts, pounded thin
- Salt and pepper, to taste
- Flour, for dredging
- 1 egg, beaten
- 1 cup panko breadcrumbs
- Vegetable oil, for frying
For the Spicy Miso Broth
- 2 tablespoons sesame oil
- 3 cloves garlic, finely chopped
- 1 tablespoon fresh ginger, finely chopped
- 4 cups chicken broth
- 3 tablespoons miso paste (red or mixed for robust flavor)
- 1–2 teaspoons chili paste or chili powder, adjust to taste
For the Noodles and Garnishes
- Fresh or dried ramen noodles, enough for 2-3 servings
- 2 soft-boiled eggs, halved
- 2 scallions, thinly sliced
- Optional: toasted sesame seeds, nori strips
- Drizzle of sesame oil, to finish
Instructions
- Prepare the Chicken Katsu: Pound the chicken breasts evenly for uniform cooking and season lightly with salt and pepper. Set up a breading station with flour, beaten egg, and panko breadcrumbs. Dredge each chicken piece in flour, dip in egg, and coat thoroughly with panko. Fry in hot oil at 350°F until golden and crispy, about 3-4 minutes per side. Drain on paper towels.
- Make the Spicy Miso Broth: In a pot, heat sesame oil and sauté finely chopped garlic and ginger until fragrant. Add chicken broth, miso paste, and chili paste or powder, stirring well to dissolve the miso. Simmer gently to develop the flavors while preparing the noodles and toppings.
- Cook the Ramen Noodles: Boil ramen noodles according to package instructions until tender but still firm to the bite. Drain and keep warm until serving.
- Assemble the Bowl: Divide cooked noodles into serving bowls. Ladle the hot spicy miso broth over the noodles. Slice the crispy chicken katsu and place on top. Garnish with scallions, soft-boiled eggs, and drizzle with sesame oil. Add optional toasted sesame seeds or nori strips if desired.
Notes
- Use fresh miso paste for a cleaner, more vibrant flavor.
- Maintain frying oil temperature at 350°F for perfect crispiness.
- Broth can be made ahead and flavors deepen if chilled overnight.
- Soft boil eggs for 6-7 minutes for ideal runny yolks.
- Avoid overcooking noodles; they should retain slight firmness.
