Sauce

  • 1/3 cup sun-dried tomatoes, chopped (preferably oil-packed)
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/2 cup freshly grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook the Spaghetti: Bring a large pot of salted water to a boil, then add the spaghetti. Cook according to package instructions until al dente, about 8-10 minutes. Drain, reserving a little pasta water for later, and set aside.
  2. Sauté Garlic and Sun-Dried Tomatoes: Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Add chopped sun-dried tomatoes and cook for 2-3 minutes to release their flavor.
  3. Prepare the Cream Sauce: Pour in the heavy cream and stir gently to combine. Let it simmer for 5 minutes to thicken and absorb the tomato flavor. Season with salt and pepper to taste.
  4. Add Spinach and Combine: Stir fresh spinach into the cream sauce and cook until wilted but still vibrant green, about 2 minutes. Toss the cooked spaghetti into the pan and mix thoroughly. If the sauce is too thick, add reserved pasta water a tablespoon at a time to reach desired consistency.
  5. Finish with Parmesan: Remove from heat and sprinkle Parmesan cheese over the pasta. Stir gently until the cheese melts smoothly into the sauce. Taste and adjust seasoning if needed.
