Instructions
- Boil the Potatoes: Start by boiling the baby potatoes in salted water until fork-tender, about 15-20 minutes. This ensures the potatoes are soft inside, ready to be smashed without falling apart.
- Smash and Season: Drain the potatoes and let them cool slightly. Place them on a baking sheet, and gently press down with the bottom of a glass or potato masher just enough to flatten them without breaking apart. Drizzle generously with olive oil and sprinkle with salt and freshly ground pepper.
- Roast Until Crispy: Bake the smashed potatoes in a preheated oven at 425°F (220°C) until they turn golden and crispy on the edges, around 25-30 minutes. Keep an eye on them to avoid burning and ensure perfect crispness.
- Prepare the Garlic Feta Sauce: While the potatoes roast, blend crumbled feta cheese, minced garlic, olive oil, lemon juice, herbs, and optionally a spoonful of Greek yogurt or sour cream until smooth and creamy. Adjust seasoning to taste with salt and pepper.
