Description

Savory Pistachio-Crusted Brie Bites are an elegant appetizer combining creamy brie cheese with a crunchy pistachio crust, offering a unique texture and a perfect balance of savory and subtle sweetness. Ideal for parties and gatherings, these bite-sized treats are easy to prepare, versatile to serve warm or at room temperature, and customizable with various nuts, herbs, and glazes to suit your taste.

Ingredients

Scale

Main Ingredients

  • 8 oz Brie cheese wheel, cut into 1 to 1.5 inch cubes with rind intact
  • 1 cup shelled pistachios, finely chopped
  • 1 large egg, lightly beaten
  • ½ cup all-purpose flour (or almond flour for gluten-free)
  • 2 tablespoons honey, for drizzling
  • 1 tablespoon fresh thyme or rosemary, finely chopped (optional)
  • 1 tablespoon olive oil or butter, for roasting

Instructions

  1. Prepare the Brie: Cut the brie wheel into small, bite-sized cubes about 1 to 1.5 inches each, keeping the rind intact to help the pieces hold their shape during baking.
  2. Set up the coating stations: Place flour in one shallow dish, the beaten egg in a second shallow dish, and mix the finely chopped pistachios with fresh herbs (if using) in a third shallow dish.
  3. Coat the brie cubes: Toss each brie cube first in the flour, shaking off any excess, then dip it into the beaten egg wash. Finally, roll the cube generously in the pistachio mixture, pressing lightly so the nuts adhere firmly to all sides.
  4. Bake and glaze: Arrange the coated brie bites on a parchment-lined baking sheet. Bake in a preheated oven at 375°F (190°C) for 10–12 minutes or until the brie is melty inside and the pistachio crust turns golden brown. Remove from oven and immediately drizzle with honey and additional fresh herbs if desired.

Notes

  • Use chilled brie to help the bites keep their shape during baking.
  • Finely chop pistachios for better adhesion and a uniform crust.
  • Don’t skip the honey glaze, which complements the nutty, savory flavors with a touch of sweetness.
  • Best served warm, so the brie is soft but not fully melted out.
  • Experiment with fresh herbs like thyme, rosemary, parsley, chives, or basil to add fragrance and color.
  • For a gluten-free version, substitute all-purpose flour with almond flour or gluten-free breadcrumbs.
  • Try swapping pistachios for other nuts like almonds, pecans, or walnuts to vary the flavor and texture.
  • Add spice with cayenne pepper or smoked paprika to the pistachio coating for a warm twist.
  • Top with fig jam or cranberry sauce for a sweet and tangy contrast.
