Ingredients
Scale
Red Layer
- 1 cup strawberry juice or puree (fresh or frozen)
- 1–2 tablespoons honey or maple syrup (optional, for sweetness)
White Layer
- 1 cup Greek yogurt
- 2–3 tablespoons milk or water (to thin yogurt for easier pouring)
Blue Layer
- 1 cup blueberry juice or puree (fresh or frozen)
- 1–2 tablespoons honey or maple syrup (optional, for sweetness)
Other
- Popsicle molds
- Popsicle sticks
Instructions
- Prepare the Red Layer: Blend fresh or frozen strawberries into a puree or use ready-made strawberry juice. If desired, sweeten lightly with honey or maple syrup. Pour the mixture into the popsicle molds about one-third full and freeze for approximately 45 minutes until firm.
- Add the White Layer: Mix Greek yogurt with a small amount of milk or water to thin it slightly for easier pouring. Gently spoon or pour this creamy layer over the frozen red layer, filling the molds another third of the way. Freeze again for 45 minutes or until solid.
- Finish with the Blue Layer: Prepare blueberry puree or use blueberry juice, optionally sweetened to taste. Carefully pour this final layer on top of the white layer. Insert popsicle sticks and freeze the entire mold for at least 4 hours or overnight until completely set.
Notes
- Patience is key: Ensure each layer is completely frozen before adding the next to prevent colors from blending.
- Use fresh fruit whenever possible for the best flavor and texture.
- Thin the yogurt with milk or water to create smooth, even layers that freeze well.
- Insert popsicle sticks only after the white layer has solidified to keep them upright during freezing.
- Cover molds with plastic wrap or lids to reduce frost build-up and maintain creamy texture.
- For a vegan version, substitute Greek yogurt with coconut yogurt.
- Customize flavors by swapping strawberries and blueberries with raspberries or blackberries, or adding chia seeds or fruit chunks for texture.
- Store popsicles in an airtight container to prevent freezer burn; they keep well for up to two weeks.
- Allow popsicles to sit a few minutes at room temperature before serving if they are too hard.
