- Reserved pasta water, as needed to adjust sauce consistency
Instructions
- Prepare the Steak: Season the steak generously with salt and pepper. Heat a cast-iron skillet or heavy pan over high heat until very hot. Sear the steak for 3-4 minutes per side, depending on thickness, until a golden-brown crust forms. Remove from pan and let rest to keep juices intact before slicing.
- Caramelize the Onions: While steak rests, heat butter and olive oil over low heat in a pan. Add thinly sliced onions and cook slowly, stirring frequently, until deeply golden and sweet, about 25-30 minutes.
- Prepare the Pasta: Cook pasta in salted boiling water until al dente according to package instructions. Drain pasta, reserving one cup of pasta water for the sauce.
- Make the Cream Sauce: To the caramelized onions, add minced garlic and sauté for one minute. Pour in heavy cream and simmer gently to thicken. Add reserved pasta water as needed to reach desired sauce consistency. Stir in grated Parmesan cheese and fresh herbs. Season with salt and pepper to taste.
- Combine and Serve: Toss the cooked pasta in the cream sauce until fully coated. Plate the pasta and arrange thin slices of rested steak on top. Garnish with extra Parmesan cheese and fresh herbs for an elegant presentation.
