Ingredients
Scale
Primary Ingredients
- 1 cup fresh brewed bold coffee, cooled to room temperature
- 1 cup full-fat coconut milk
- 2–3 tablespoons maple syrup or raw honey, to taste
- 1 teaspoon vanilla extract
- Pinch of sea salt
Optional Variations
- 1/4 avocado or 1 tablespoon almond butter for extra creaminess
- 1 tablespoon unsweetened cocoa powder for mocha twist
- Pinch of cinnamon or cardamom for spiced flavor
- Vanilla bean seeds to replace vanilla extract for intense aroma
- Substitute maple syrup with coconut sugar or date syrup for different sweetness
Instructions
- Step 1: Brew the Coffee. Start by brewing a strong pot of your favorite bold roast coffee. Allow it to cool completely to room temperature to prevent melting the popsicles when combined with other ingredients.
- Step 2: Mix the Ingredients. In a mixing bowl, whisk together the cooled coffee, full-fat coconut milk, maple syrup or honey, vanilla extract, and a pinch of sea salt until smooth and well combined. Add any optional ingredients here if desired.
- Step 3: Pour into Molds. Carefully pour the coffee mixture into popsicle molds, leaving some space at the top to allow for expansion during freezing.
- Step 4: Freeze Overnight. Insert popsicle sticks into the molds and freeze for at least 6 hours or until fully solidified.
- Step 5: Enjoy! To unmold, briefly run warm water around the mold edges, then gently pull out the popsicles. Serve immediately for the freshest taste.
Notes
- Use freshly brewed coffee for the best flavor and aroma.
- Ensure coffee and coconut milk are fully cooled before mixing.
- Silicone molds aid in easy removal and creative shapes.
- Taste the mixture before freezing and adjust sweetness as needed.
- Add chopped nuts or cacao nibs at the bottom of molds for added texture.
