Description

This One Pot Garlic Parmesan Sauce is a creamy, flavorful sauce made effortlessly in a single pot. Blending sharp Parmesan cheese with aromatic garlic, butter, and cream, it’s perfect for quick weeknight dinners or special occasions. Versatile and rich, the sauce can be drizzled over pasta, tossed with roasted veggies, used as a dip, or as a base for casseroles.

Ingredients

Scale

Main Ingredients

  • 2 tablespoons butter
  • 34 garlic cloves, freshly minced
  • 2 tablespoons all-purpose flour (or gluten-free flour for gluten-free option)
  • 1 1/2 cups milk or cream
  • 1 cup grated Parmesan cheese
  • Salt, to taste
  • Black pepper, freshly cracked, to taste

Optional Ingredients

  • Fresh parsley, basil, or chives, chopped (for garnish)
  • Red pepper flakes or cayenne pepper (for a spicy kick)
  • Fresh thyme, rosemary, or chives (for herb infusion)
  • Vegan butter and coconut milk (for dairy-free version)
  • Pecorino Romano or Asiago cheese (as cheese alternatives)
  • Sautéed sliced mushrooms (for mushroom addition)

Instructions

  1. Melt the Butter and Sauté Garlic: Gently melt the butter in a medium-sized pot over medium heat. Once melted, add freshly minced garlic and stir for about 1-2 minutes until fragrant but not browned to enhance the sauce’s base flavor.
  2. Create the Roux: Sprinkle the all-purpose flour over the butter and garlic mixture. Stir continuously for 1-2 minutes to cook the flour and eliminate any raw flour taste, forming the thickening base for the sauce.
  3. Add Milk or Cream Slowly: Gradually pour in your choice of milk or cream while whisking constantly to prevent lumps. Continue stirring until the mixture thickens and becomes smooth and velvety, approximately 3-5 minutes.
  4. Stir in Parmesan Cheese: Lower the heat and mix in the grated Parmesan cheese until melted and fully combined, giving the sauce its rich, cheesy depth and smooth texture.
  5. Season and Finish: Season the sauce with salt and freshly cracked black pepper to taste. Add any optional fresh herbs now if using, stir well, and your sauce is ready to serve!

Notes

  • Use freshly minced garlic for the best aroma and flavor.
  • Grate Parmesan cheese yourself for better melting and taste compared to pre-grated cheese.
  • Whisk constantly when adding milk or cream to avoid lumps.
  • Maintain medium heat to prevent scorching and breaking the cheese.
  • If the sauce becomes too thick, add a splash of milk to adjust consistency.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Freezing is not recommended as the sauce may separate upon thawing.
  • Reheat gently on low heat, stirring frequently, adding milk if needed to restore smoothness.
