Description

Mini Apple Pies combine a buttery, flaky crust with a sweet, spiced apple filling to create charming, portable treats perfect for any occasion. These bite-sized pies are easy to make with simple pantry ingredients, customizable to suit various dietary needs, and deliver a comforting, balanced sweetness with a warm, tender texture.

Ingredients

Scale

Filling

  • 3 cups tart and crisp apples (such as Granny Smith), peeled, cored, and diced
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon lemon juice
  • Pinch of salt
  • 1 tablespoon butter, cut into small dots

Crust

  • 1 batch pie crust dough (store-bought or homemade), enough to roll out to 1/8 inch thickness

Finishing

  • 1 egg, beaten (for egg wash) or almond milk (for vegan option)

Instructions

  1. Prepare the Filling: Peel, core, and dice the apples into small, even pieces. In a bowl, combine the apples with granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and a pinch of salt. Stir well and let the mixture sit for about 10 minutes to meld flavors and release natural juices.
  2. Roll Out the Dough: On a lightly floured surface, roll out the pie crust dough until it is about 1/8 inch thick. Use a round cookie cutter or cup to cut out circles that are large enough to hold the filling but still make charming mini pies. Set aside half the circles for the bottoms and half for the tops.
  3. Assemble the Mini Pies: Place bottom dough circles on a lined baking sheet. Spoon a small amount of the apple filling onto each circle, being careful not to overfill. Dot the filling with tiny pieces of butter. Top each with another dough circle and gently press the edges to seal. Use a fork to crimp and secure the edges neatly.
  4. Add Finishing Touches: Brush the tops of each mini pie with beaten egg or almond milk for a golden, crispy finish. Using a sharp knife, cut small slits in the top crust to allow steam to escape and prevent sogginess.
  5. Bake to Perfection: Preheat the oven to 375°F (190°C). Bake the mini apple pies for 20 to 25 minutes, or until the crust is golden brown and the filling is bubbly. Remove from the oven and let them cool slightly for 10–15 minutes before serving to allow the filling to set.

Notes

  • Keep everything cold: Chilling your dough and butter helps create a flakier crust.
  • Don’t overfill: Overfilling can cause pies to burst or become soggy.
  • Use a sharp cutter for clean edges to seal the pies better and ensure a neat look.
  • Let pies rest after baking for 10-15 minutes to allow filling to thicken properly.
  • Brush egg wash lightly to avoid uneven baking.
