Ingredients
Scale
Cake Batter
- 1 ½ cups all-purpose flour
- 1 ½ teaspoons baking powder
- 1 cup granulated sugar
- 5 large eggs
- 1 cup whole milk
- 1 cup mango puree (fresh or frozen)
- ½ cup Greek yogurt or traditional lassi
- 1 teaspoon vanilla extract
Tres Leches Soaking Mixture
- 1 can (12 oz) evaporated milk
- 1 can (14 oz) sweetened condensed milk
- 1 cup heavy cream
Topping
- 1 cup heavy cream (for whipping)
- ½ teaspoon vanilla extract (for whipping)
- Fresh mango slices or mint leaves for garnish
Instructions
- Prepare the Cake Batter: Preheat your oven to 350°F (175°C). In a large bowl, whisk the eggs and granulated sugar until pale and fluffy. In another bowl, sift together the flour and baking powder. Gradually fold the dry ingredients into the wet mixture. Then gently mix in whole milk, mango puree, vanilla extract, and Greek yogurt until combined and smooth.
- Bake the Cake: Pour the batter evenly into a greased 9×13-inch pan. Bake for 25 to 30 minutes or until a toothpick inserted in the center comes out clean. Let the cake cool slightly before proceeding.
- Make the Tres Leches Soaking Mixture: In a bowl, whisk together evaporated milk, sweetened condensed milk, and heavy cream until smooth and well combined.
- Soak the Cake: Once cooled, poke small holes all over the cake’s surface using a fork or skewer. Slowly pour the tres leches mixture over, allowing it to soak deeply and evenly. Refrigerate for at least 2 hours or preferably overnight for best results.
- Whip the Topping and Garnish: Before serving, whip 1 cup of heavy cream with ½ teaspoon vanilla extract until soft peaks form. Spread or pipe over the soaked cake and garnish with fresh mango slices or mint leaves for presentation.
Notes
- Use ripe mangos for the best natural sweetness and vibrant color.
- Allow ample soaking time for the milk mixture to make the cake ultra moist.
- Fold the batter gently to keep it light and tender; avoid overmixing.
- Chill the cake before serving to allow flavors to meld and keep it firm.
- This cake improves in flavor after a day or two in the refrigerator.
