Description

Lemon Garlic Butter Shrimp with Zoodles is a quick, light, and flavorful low-carb dish featuring sautéed shrimp in a buttery lemon garlic sauce served over fresh zucchini noodles. Perfect for busy weeknights, this gluten-free recipe offers vibrant citrusy flavors combined with garlic and creamy butter, making it both delicious and nutritious.

Ingredients

Scale

Shrimp and Zoodles

  • 12 oz fresh shrimp, peeled and deveined
  • 3 medium zucchinis, spiralized into noodles (zoodles)

Sauce and Seasoning

  • 3 tbsp butter, divided
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • Juice and zest of 1 lemon
  • Salt, to taste
  • Black pepper, to taste
  • 2 tbsp fresh parsley, finely chopped

Instructions

  1. Prepare the Shrimp: Rinse and pat dry the shrimp. Lightly season with salt and pepper. Heat olive oil and half the butter in a large skillet over medium-high heat. Add shrimp in a single layer and cook about 2 minutes per side until pink and opaque. Remove the shrimp from the skillet and set aside.
  2. Create the Lemon Garlic Butter Sauce: Reduce heat to medium and melt the remaining butter in the same skillet. Add minced garlic and sauté for about 1 minute until fragrant, taking care not to burn the garlic. Stir in fresh lemon juice and zest, and let the sauce simmer gently to blend the flavors.
  3. Cook the Zoodles: Add the zucchini noodles directly to the skillet with the lemon garlic sauce. Toss gently and cook for 2 to 3 minutes until the zoodles soften slightly but keep a firm bite.
  4. Combine and Finish: Return cooked shrimp to the skillet and toss everything together to coat the shrimp well with the sauce. Adjust seasoning with salt and pepper as needed. Sprinkle with freshly chopped parsley. Remove from heat and serve immediately.

Notes

  • Do not overcook shrimp to avoid rubbery texture—they cook quickly.
  • Use fresh zucchini noodles and pat dry to prevent sogginess.
  • Always use fresh lemon juice and zest for the best citrus flavor.
  • Sauté garlic on medium heat and stir constantly to keep its fragrance without burning.
  • Customize the heat level by adding crushed red pepper flakes or cayenne pepper as desired.
