Ingredients
Scale
Meat and Beans
- 1/2 lb ground chorizo
- 1 cup cooked black beans
- 2–3 chipotle peppers in adobo sauce, chopped
Vegetables & Fresh Ingredients
- 1/2 cup corn kernels
- 1/2 cup chopped onions
- 1/4 cup chopped fresh cilantro
- 1 tablespoon fresh lime juice
Cheese
- 3/4 cup shredded cheese (cheddar or Mexican blend)
Wraps & Oil
- 8–10 eggroll wrappers
- Vegetable oil or neutral high smoke point oil for frying
Instructions
- Prepare the Filling: Cook the ground chorizo in a skillet over medium heat until browned and fragrant, about 5-7 minutes. Drain excess fat if needed, then stir in cooked black beans, chopped chipotle peppers, sautéed onions, and corn. Let the mixture simmer for 5 minutes so the flavors meld beautifully.
- Add Cheese and Fresh Ingredients: Remove the filling from heat and stir in shredded cheese, chopped cilantro, and a squeeze of fresh lime juice. This combination will add creaminess, brightness, and the perfect finishing touch to your filling.
- Assemble the Eggrolls: Lay out an eggroll wrapper on a clean surface, place a generous spoonful of filling near one corner, then carefully fold the sides over the filling and roll tightly into a neat cigar shape. Use a little water to seal the edges and prevent any filling from escaping during frying.
- Fry until Golden Brown: Heat cooking oil in a deep pan or skillet until it reaches about 350°F (175°C). Fry the eggrolls in batches for 2-3 minutes or until they’re golden brown and crispy. Drain on paper towels to remove excess oil and keep them warm.
Notes
- Don’t overfill the eggrolls to ensure easy rolling and prevent breakage.
- Seal the wrappers properly using water or beaten egg to avoid filling leakage during cooking.
- Maintain the oil temperature around 350°F (175°C) for crispy, non-greasy eggrolls.
- Prepare the filling ahead of time to enhance flavors and save time.
- Drain fried eggrolls on paper towels to absorb excess oil for a cleaner crunch.
