Ingredients
Scale
Base Ingredients
- 1 1/2 cups plain or vanilla Greek yogurt
- 1/4 cup fresh key lime juice
- 2–3 tablespoons honey or maple syrup (adjust to taste)
- 1 teaspoon lime zest
- 1/2 teaspoon vanilla extract
Crust
- 1 cup graham cracker crumbs
- 3 tablespoons melted butter or coconut oil
Optional Toppings
- 1 tablespoon chia seeds
- 2 tablespoons toasted coconut flakes
- 2 tablespoons chopped pistachios or almonds
- 1/4 cup fresh or frozen raspberries or blueberries
- Optional: a dash of ground ginger or cinnamon
Instructions
- Prepare the crust: Crush the graham crackers into fine crumbs, then mix them thoroughly with melted butter or coconut oil until the mixture resembles wet sand. Press this crumb mixture evenly onto a parchment-lined baking sheet or tray to form the crust base.
- Mix the yogurt filling: In a bowl, combine the Greek yogurt, honey or maple syrup, fresh key lime juice, lime zest, and vanilla extract. Stir gently until the mixture is smooth and all ingredients are fully incorporated.
- Assemble the bark: Spread the yogurt mixture evenly over the prepared graham cracker crust layer. Use a spatula to smooth the surface ensuring every bite will contain both crust and creamy filling.
- Add optional toppings: Sprinkle chia seeds, toasted coconut flakes, chopped nuts, berries, or a dash of ground ginger or cinnamon on top to personalize your bark with extra texture and flavor.
- Freeze until firm: Place the tray in the freezer for at least 4 hours or until the bark is completely solid. Once frozen, break it into pieces and store in an airtight container in the freezer until ready to serve.
Notes
- Use full-fat Greek yogurt for a richer, creamier texture and enhanced flavor.
- Always use fresh key lime juice and zest for the best authentic tang.
- Press the crust firmly to help it hold together when breaking the bark.
- Spread the yogurt layer evenly for consistent texture in every piece.
- Freeze thoroughly to ensure the bark sets well and doesn’t crumble.
- Store leftovers in an airtight container in the freezer for up to 2 weeks.
- Allow frozen bark to soften at room temperature for 5-10 minutes before serving if needed.
