Description

Irresistible Gordon Ramsay Beef Stroganoff is a rich, creamy, and tender beef dish elevated with mushrooms, sour cream, and aromatic herbs. This classic Russian-inspired recipe combines deep, balanced flavors and a luxurious texture that melts in your mouth, perfect for both comforting weeknight dinners and special occasions.

Ingredients

Scale

Beef

  • 500g sirloin or fillet beef strips
  • Salt, to taste
  • Black pepper, to taste

Mushrooms and Aromatics

  • 200g button mushrooms, sliced
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced

Sauce

  • 2 tbsp butter
  • 1 tbsp olive oil
  • 150ml beef stock
  • 1 tbsp Dijon mustard
  • 150g sour cream
  • Smoked paprika, a pinch (optional)
  • Salt and black pepper, to taste

Garnish

  • Fresh parsley, chopped

Instructions

  1. Prepare the Beef: Slice the beef thinly against the grain to ensure tenderness. Pat the beef strips dry with paper towels for a good sear. Lightly season with salt and pepper before cooking.
  2. Sauté Mushrooms and Aromatics: Heat butter and olive oil in a pan over medium heat. Add chopped onions and garlic, cooking until soft and fragrant. Add sliced mushrooms and cook until they release their moisture and start to brown. Remove this mixture from the pan and set aside.
  3. Cook the Beef: In the same pan, quickly sear the beef strips, browning all sides while keeping the inside juicy. This should take about 1 to 2 minutes per side. Remove and set aside.
  4. Build the Sauce: Return the mushroom and aromatic mixture to the pan. Pour in the beef stock and stir in the Dijon mustard. Simmer gently to reduce the liquid and concentrate the flavors.
  5. Finish with Sour Cream: Reduce the heat to low and carefully stir in the sour cream to prevent curdling, creating the signature creamy texture. Adjust seasoning with salt, black pepper, and smoked paprika if desired.
  6. Garnish and Serve: Sprinkle freshly chopped parsley over the stroganoff just before serving to add a bright, herbaceous finish.

Notes

  • Pat the beef strips dry and avoid overcrowding the pan to achieve the best sear and tenderness.
  • Use fresh button mushrooms for superior flavor and texture.
  • Keep the heat low when adding sour cream to maintain a smooth, silky sauce consistency.
  • Fresh herbs like parsley or chives brighten the dish and balance the richness.
  • Choose a quality beef stock or homemade broth to elevate the overall flavor.
