For the Tzatziki Sauce

  • 1 medium cucumber, grated and excess water squeezed out
  • 1 clove garlic, minced
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • Salt and black pepper, to taste
  • 2 tbsp fresh dill, chopped

For the Bowl Assembly

  • 1 cup cooked rice or quinoa
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, thinly sliced
  • Extra fresh dill and parsley for garnish

Instructions

  1. Prepare the chicken: Marinate the chicken with olive oil, lemon juice, minced garlic, salt, pepper, and chopped fresh dill and parsley. Let it sit for at least 20 minutes to absorb the Mediterranean flavors.
  2. Cook the chicken: Grill or pan-sear the chicken over medium-high heat for 5-7 minutes per side, until cooked through and juicy. Allow the chicken to rest before slicing thinly.
  3. Make the tzatziki sauce: In a bowl, mix Greek yogurt, grated cucumber (well drained), minced garlic, lemon juice, olive oil, salt, pepper, and chopped dill. Stir thoroughly until creamy and flavorful. Adjust seasoning as needed.
  4. Assemble the bowls: Start with a base of cooked rice or quinoa. Top with sliced grilled chicken, fresh cherry tomatoes, red onion slices, and additional fresh herbs. Spoon generous amounts of tzatziki sauce over the top to finish.
