Steak Bites

  • 1 lb sirloin or ribeye steak, trimmed and cut into bite-sized pieces
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 2 tbsp olive oil

Garlic & Herb Butter Sauce

  • 3 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1 tbsp fresh parsley, chopped
  • 1 tsp fresh thyme leaves

Mashed Potatoes

  • 2 lbs russet or Yukon Gold potatoes, peeled and chopped
  • 1/2 cup warm milk or cream
  • 2 tbsp unsalted butter
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Prepare the Mashed Potatoes: Peel and chop potatoes into evenly sized chunks. Boil in salted water until tender, about 15-20 minutes. Drain well, then mash with warm milk or cream and butter, seasoning generously with salt and pepper. Keep warm.
  2. Cut and Season the Steak Bites: Trim any excess fat from the steak and cut into bite-sized pieces. Season with salt and freshly ground black pepper to taste.
  3. Sear the Steak Bites: Heat olive oil in a large skillet over medium-high heat. Add steak bites in a single layer, working in batches if needed to avoid overcrowding. Sear until browned on all sides but still juicy inside, about 2-3 minutes per side. Remove from skillet and set aside.
  4. Make the Garlic & Herb Butter Sauce: Reduce heat to medium and add butter to the skillet. Once melted, add minced garlic, parsley, and thyme. Stir frequently for about a minute until fragrant but not browned. Return steak bites to the pan and toss to coat evenly in the sauce.
