Garlic & Herb Butter Sauce

- 3 cloves garlic, minced
- 1 tbsp fresh parsley, chopped
- 1 tsp fresh thyme leaves
Mashed Potatoes
- 2 lbs russet or Yukon Gold potatoes, peeled and chopped
- 1/2 cup warm milk or cream
- 2 tbsp unsalted butter
- Salt, to taste
- Freshly ground black pepper, to taste
Instructions
- Prepare the Mashed Potatoes: Peel and chop potatoes into evenly sized chunks. Boil in salted water until tender, about 15-20 minutes. Drain well, then mash with warm milk or cream and butter, seasoning generously with salt and pepper. Keep warm.
- Cut and Season the Steak Bites: Trim any excess fat from the steak and cut into bite-sized pieces. Season with salt and freshly ground black pepper to taste.
- Sear the Steak Bites: Heat olive oil in a large skillet over medium-high heat. Add steak bites in a single layer, working in batches if needed to avoid overcrowding. Sear until browned on all sides but still juicy inside, about 2-3 minutes per side. Remove from skillet and set aside.
