Ingredients
Scale
Main Ingredients
- 4–6 medium-sized fresh carrots
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt, to taste
- Black pepper, to taste
- 1 tablespoon fresh lemon juice
- 2 tablespoons fresh parsley or thyme, chopped
Optional Spices
- 1/2 teaspoon ground cumin or smoked paprika
Variation Ingredients (Optional)
- Pinch of red pepper flakes or cayenne (for spicy twist)
- 1 teaspoon sesame oil and 1 tablespoon toasted sesame seeds (for Asian-inspired)
- 1 tablespoon maple syrup (for maple glazed)
- Vegan butter instead of olive oil (for richer mouthfeel)
- Alternative herbs: dill, rosemary, or basil
Instructions
- Prepare and Boil the Carrots: Wash the carrots thoroughly and trim the ends. Place them whole in a pot of salted boiling water and cook for about 15 minutes, or until the carrots are tender enough to be gently smashed but still firm enough to hold their shape.
- Smash the Carrots Gently: Drain the carrots and transfer them to a cutting board or another sturdy surface. Using the bottom of a glass or a wide spatula, press down gently on each carrot to flatten it slightly without breaking it apart.
- Sauté with Seasonings: Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the smashed carrots to the skillet and season with salt, pepper, and any optional spices like cumin or smoked paprika. Cook for 5-7 minutes, turning occasionally, allowing the edges of the carrots to caramelize and crisp.
- Finish with Fresh Herbs and Lemon: Just before serving, sprinkle the fresh herbs over the carrots and squeeze a generous amount of lemon juice on top. Toss gently to combine and serve warm.
Notes
- Pick fresh, firm, bright orange carrots for best flavor and texture.
- Do not overcook carrots; keep them tender but firm enough to maintain shape when smashed.
- Use a heavy, sturdy object like a glass or small saucepan bottom to gently smash the carrots.
- Allow the carrots to caramelize slightly in the pan for deeper, savory flavor.
- Start with a small amount of lemon juice and add more to taste to balance acidity.
