Ingredients
Scale
Wet Ingredients
- 2 large eggs or 2 flax eggs (see FAQ for flax egg preparation)
- 1/3 cup honey or maple syrup
- 1/3 cup olive oil or melted coconut oil
- 1 teaspoon vanilla extract
- 1 1/2 cups grated fresh carrots
Dry Ingredients
- 1 3/4 cups whole wheat flour (or gluten-free flour blend for gluten-free version)
- 1/4 cup ground flaxseed
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
Optional Mix-ins
- 1/3 cup chopped walnuts, raisins, or shredded coconut (optional)
Instructions
- Prepare the dry ingredients: In a medium bowl, whisk together whole wheat flour, ground flaxseed, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves until evenly combined.
- Mix the wet ingredients: In a separate large bowl, beat the eggs (or flax eggs). Stir in honey or maple syrup, vanilla extract, and the oil until the mixture is smooth and well incorporated.
- Combine carrots and wet mixture: Fold the grated fresh carrots into the wet ingredients, spreading them evenly to add moisture and natural sweetness.
- Gently add dry ingredients: Pour the dry ingredient mixture into the wet bowl. Using a spatula, fold just until combined to avoid overmixing and ensure tender muffins.
- Add optional mix-ins: If desired, stir in chopped walnuts, raisins, or shredded coconut to introduce extra texture and flavor.
- Bake until golden: Preheat the oven to 350°F (175°C). Spoon the batter into a greased or lined muffin tin, filling each cup about three-quarters full. Bake for 18 to 22 minutes or until a toothpick inserted in the center comes out clean.
Notes
- Don’t overmix the batter to keep muffins light and fluffy rather than dense.
- Use freshly grated carrots for optimal moisture and flavor instead of pre-shredded ones.
- Ground flaxseed is preferred over whole flaxseeds for better digestion and nutrient absorption.
- Keep an eye on oven temperature as it can vary; check muffins near the end to prevent overbaking.
- Allow muffins to cool in the tin for a few minutes before transferring to a wire rack to cool completely.
