Instructions

  2. Mix the wet ingredients: In a separate large bowl, beat the eggs (or flax eggs). Stir in honey or maple syrup, vanilla extract, and the oil until the mixture is smooth and well incorporated.
  3. Combine carrots and wet mixture: Fold the grated fresh carrots into the wet ingredients, spreading them evenly to add moisture and natural sweetness.
  4. Gently add dry ingredients: Pour the dry ingredient mixture into the wet bowl. Using a spatula, fold just until combined to avoid overmixing and ensure tender muffins.
