Instructions

  1. Prepare the Prawns: Pat the prawns dry and season lightly with salt and pepper. Heat olive oil and a bit of butter in a skillet over medium-high heat and cook the prawns until pink and opaque, about 2 minutes per side. Remove and set aside to prevent overcooking.
  2. Sauté Aromatics: In the same skillet, add a little more butter if needed, then sauté minced garlic and finely chopped shallots until fragrant and translucent. This step builds the flavor base for the sauce.
  3. Create the Creamy Sauce: Add chopped sun dried tomatoes and cook briefly. Pour in heavy cream and stir to combine, letting it simmer gently so the sauce thickens. Stir in grated Parmesan cheese until melted and smooth.
  4. Add Greens and Season: Toss in fresh spinach leaves and stir until just wilted. Taste and adjust seasoning with salt, pepper, and any fresh herbs you’re using like basil or parsley.
  5. Return Prawns to the Pan: Place the cooked prawns back into the creamy sauce, coating them well. Let everything warm together for a minute or two so the flavors meld perfectly.
