Description

Cotton Candy Cheesecake is a whimsical and indulgent dessert blending the nostalgic sweetness of cotton candy with the creamy texture of classic cheesecake. This pastel-colored treat is perfect for celebrations or everyday enjoyment, offering a unique flavor experience that balances airy sugary notes with rich creaminess.

Ingredients

Scale

Graham Cracker Crust

  • 1 1/2 cups crushed graham crackers
  • 5 tablespoons melted butter
  • 2 tablespoons sugar

Cheesecake Filling

  • 24 ounces (3 packages) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy cream or sour cream
  • 1 teaspoon cotton candy flavoring or extract
  • Food coloring (pastel pink, blue, or purple) – optional

Instructions

  1. Prepare the Crust: Combine crushed graham crackers, melted butter, and sugar until evenly mixed. Press firmly into the base of a springform pan and chill in the refrigerator while preparing the filling.
  2. Mix the Cheesecake Filling: Beat cream cheese until smooth and creamy. Gradually add sugar and continue beating. Add eggs one at a time, mixing well after each. Stir in vanilla extract, heavy cream (or sour cream), and cotton candy flavoring. Add food coloring if desired for pastel effect.
  3. Pour and Smooth: Pour the filling over the chilled crust, spreading evenly. Tap the pan gently on the counter to release bubbles and smooth the surface with a spatula.
  4. Bake and Cool: Bake in a water bath at 325°F (163°C) for 50-60 minutes. Once baked, cool gradually to room temperature before refrigerating overnight to set fully.
  5. Garnish and Serve: Before serving, top with fresh cotton candy or decorate with sprinkles and edible glitter for a whimsical finish.

Notes

  • Use room temperature cream cheese and eggs for the smoothest batter.
  • Wrap the pan with foil and use a water bath to prevent cracking and ensure even baking.
  • Mix just until combined to avoid introducing excess air which causes cracks.
  • Chill cheesecake for at least 6 hours or overnight for best texture and flavor.
  • Choose quality cotton candy extract for authentic flavor.
