Ingredients
Scale
For the Crust
- 1 1/2 cups graham cracker crumbs or crushed Oreos
- 6 tablespoons unsalted butter, melted
For the Cheesecake Filling
- 16 oz cream cheese, at room temperature
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 4 oz dark chocolate, melted and slightly cooled
- 1 cup heavy cream
For the Raspberry Layer
- 1 cup fresh raspberries, washed
Optional Garnishes
- Fresh raspberry halves
- Melted dark chocolate for drizzling
- Powdered sugar or cocoa powder for dusting
Instructions
- Prepare the Crust: Crush graham crackers or Oreos into fine crumbs. Mix the crumbs with melted butter until the texture resembles wet sand. Press this mixture evenly into silicone dome molds or small ramekins, forming a firm base. Chill the crusts in the refrigerator while preparing the filling.
- Make the Cheesecake Filling: Beat the room temperature cream cheese until smooth and creamy. Gradually add granulated sugar and vanilla extract, continuing to beat until well combined. Fold in melted dark chocolate gently until evenly mixed. In a separate bowl, whip the heavy cream until stiff peaks form. Carefully fold the whipped cream into the cream cheese mixture to create a light yet rich filling.
- Add the Raspberry Layer: Mash half of the fresh raspberries to make a natural sauce. Spoon a small amount of this puree over the chilled crusts. Then, distribute whole raspberries evenly over the puree to add bursts of fresh, juicy flavor.
- Assemble the Domes: Fill each mold with the chocolate cheesecake mixture, smoothing the top with a spatula. Tap gently to release any air bubbles and ensure the filling is level. Refrigerate the domes for at least 4 hours or overnight to allow them to set firmly.
- Unmold and Serve: Gently remove the cheesecake domes from the molds once set. Optionally, drizzle with melted dark chocolate or dust with powdered sugar or cocoa powder for an elegant finish. Serve immediately or store as desired.
Notes
- Use cream cheese at room temperature for a smoother mixture and fewer lumps.
- Keep mixing bowls and beaters chilled when whipping heavy cream to achieve stiffer peaks.
- Silicone molds help make unmolding easier and preserve the domes’ delicate shape.
- Use ripe, fresh raspberries for the best flavor and vibrant color.
- Chill the assembled domes adequately to allow them to set and maintain their shape.
