- 1 cup shredded cheddar or Monterey Jack cheese, divided
- 1/2 cup sour cream or Greek yogurt
- 2 tablespoons butter
- 1/2 teaspoon garlic powder
- Salt and pepper to taste

Instructions
- Step 1: Bake the Sweet Potatoes – Preheat your oven to 400°F (200°C). Pierce each sweet potato a few times with a fork and place them directly on the oven rack or a baking sheet. Bake for 45 to 60 minutes, or until soft when pierced with a knife.
- Step 2: Prepare the Filling – Let the sweet potatoes cool slightly, then slice them in half lengthwise. Carefully scoop out the flesh into a large mixing bowl, keeping a thin shell intact. Add butter, sour cream or Greek yogurt, chipotle peppers, 3/4 cup shredded cheese, garlic powder, salt, and pepper. Mix until smooth and well blended, adjusting seasoning to taste.
- Step 3: Stuff the Potato Shells – Spoon the creamy chipotle and cheese mixture evenly back into each sweet potato shell. Top each with the remaining shredded cheese for a cheesy crust.
- Step 4: Second Bake – Place the stuffed sweet potatoes on a baking sheet. Bake at 375°F (190°C) for 15 minutes, or until the cheese is melted and lightly golden.
- Step 5: Garnish and Serve – Remove from oven and sprinkle with freshly chopped green onions or cilantro. Serve warm and enjoy.
