Description

Cheesy Beef Lasagna Rolls are a comforting Italian dish featuring tender lasagna noodles rolled with a savory ground beef filling, creamy ricotta, and rich cheeses, all baked in a zesty marinara sauce. Perfect for meal prep or weeknight dinners, these individual rolls offer portion control and are loved by both kids and adults.

Ingredients

Scale

Pasta

  • 1012 lasagna noodles

Beef Filling

  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste

Cheese Filling

  • 1 ½ cups ricotta cheese (room temperature)
  • 1 large egg, beaten
  • ½ cup grated Parmesan cheese
  • Salt and pepper, to taste

Sauce and Topping

  • 3 cups marinara sauce
  • 1 ½ cups shredded mozzarella cheese
  • Additional grated Parmesan cheese for sprinkling

Instructions

  1. Prepare the Lasagna Noodles: Cook your lasagna noodles in salted boiling water according to package instructions (usually 8-10 minutes) until tender but firm. Drain carefully and lay them flat on a clean kitchen towel to prevent sticking. Set aside.
  2. Cook the Beef Filling: Heat a large skillet over medium heat and sauté diced onions and minced garlic until fragrant and translucent. Add ground beef, breaking it apart as it cooks. Season with salt, pepper, and Italian seasoning. Cook until beef is browned and no longer pink. Drain any excess fat.
  3. Mix the Cheese Filling: In a mixing bowl, combine room temperature ricotta cheese, beaten egg, grated Parmesan, and a pinch of salt and pepper. Stir thoroughly until smooth and creamy.
  4. Assemble the Rolls: Spread a thin, even layer of the cheese mixture onto each lasagna noodle. Spoon a generous amount of the cooked beef filling over the cheese layer. Carefully roll each noodle tightly and place seam side down into a baking dish lightly coated with marinara sauce.
  5. Top and Bake: Pour the remaining marinara sauce over the rolls. Sprinkle shredded mozzarella and additional Parmesan cheese evenly on top. Bake uncovered at 375°F (190°C) for 25-30 minutes or until cheese is melted, bubbly, and edges are slightly golden.

Notes

  • Don’t overcook noodles; slightly undercooked noodles will finish cooking in the oven and remain tender.
  • Drain excess fat from cooked beef to prevent greasy rolls.
  • Use room temperature ricotta for a smooth, well-mixed cheese filling.
  • Roll noodles tight but gently to keep ingredients intact without breaking.
  • Optionally cover with foil for the first 20 minutes of baking to retain moisture, then uncover for a bubbly crust.
