Description

Cheesecake Fruit Roll Ups are a deliciously creamy and fruity snack that perfectly balances sweet, tangy, and smooth flavors. These easy-to-make roll ups combine a luscious cheesecake base with fresh fruit purees, creating a portable, mess-free treat ideal for kids and adults alike. Customizable and visually appealing, they offer a refreshing yet indulgent taste experience, perfect for on-the-go snacking, lunchboxes, or a quick dessert.

Ingredients

Scale

Cheesecake Base

  • 8 oz cream cheese, softened
  • 1/2 cup Greek yogurt
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice

Fruit Puree

  • 1 cup fresh fruit puree (choose strawberries, blueberries, mango, or a blend)

Other

  • Parchment paper or silicone mat (for rolling and drying)

Instructions

  1. Prepare the Cheesecake Base: In a mixing bowl, combine the softened cream cheese, Greek yogurt, honey or maple syrup, vanilla extract, and lemon juice. Use a hand mixer or whisk to blend thoroughly until the mixture is smooth and creamy without lumps, achieving the signature cheesecake texture.
  2. Spread the Mixture: Line a baking sheet with parchment paper or a silicone mat. Pour the cheesecake mixture onto the sheet and spread it evenly into a thin, uniform layer about 1/8 inch thick using an offset spatula or ruler for consistency, which ensures easy rolling later.
  3. Add Fruit Puree: Gently spread a thin, even layer of your chosen fresh fruit puree over the cheesecake layer. Take care not to mix the layers; this creates a smooth fruit coating that complements the creamy base.
  4. Dry the Roll Ups: Place the baking sheet in a low-temperature oven set to about 150°F (or the oven’s lowest setting) or use a food dehydrator. Dry slowly for 4 to 6 hours, or until the mixture is no longer sticky and can be easily peeled off the parchment paper.
  5. Roll and Cut: Once fully dried, carefully peel the thin cheesecake fruit layer off the parchment paper. Cut into strips of your desired width, then roll each strip tightly from one end to the other. Store in an airtight container or enjoy immediately.

Notes

  • Uniform thickness: Use an offset spatula or ruler to spread the cheesecake mixture evenly for consistent drying and rolling.
  • Choose ripe fruit: Fresh, ripe fruit improves the natural sweetness and vibrant color of the puree.
  • Low and slow drying: Drying at a low temperature preserves the creamy flavor without cooking the mixture.
  • Non-stick surface: Always use parchment paper or a silicone mat to prevent sticking and tearing.
  • Storage tip: Store roll ups in a cool, dry place in an airtight container to maintain freshness up to 3 days at room temperature, or freeze for up to 2 months.
