Ingredients
Scale
Vegetables & Aromatics
- 4 cups potatoes, diced (Russet or Yukon Gold)
- 1 cup bell peppers, chopped
- 1 cup onions, chopped
- 3 cloves garlic, minced
- 2 tablespoons green onions or chives, sliced (for garnish)
Protein
- 8 oz smoked sausage, sliced
Liquids & Dairy
- 4 cups chicken broth
- 1 cup heavy cream or half-and-half
Fats & Oils
- 2 tablespoons butter
- 1 tablespoon olive oil
Seasonings
- 2 tablespoons Cajun seasoning (paprika, cayenne, oregano, thyme blend)
- Salt, to taste
- Black pepper, to taste
Instructions
- Prepare the Vegetables and Sausage: Dice the potatoes into bite-sized pieces, chop the bell peppers and onions, and slice the smoked sausage. Heat butter and olive oil in a large pot over medium heat. Sauté the onions, bell peppers, and garlic until translucent and fragrant. Add the sausage pieces and cook until they develop a slight crisp and smoky aroma.
- Add Seasoning and Potatoes: Sprinkle the Cajun seasoning evenly over the vegetables and sausage, stirring to coat and let the spices bloom in the oil. Add the diced potatoes and stir well to season each piece.
- Pour in Broth and Simmer: Pour the chicken broth over the ingredients until they are covered. Bring the mixture to a boil, then reduce heat to a simmer. Cook for 15 to 20 minutes or until the potatoes are tender and soft, allowing all flavors to meld.
- Blend and Add Cream: Use an immersion blender to partially blend the soup in the pot, creating a creamy texture while retaining some chunks of potato for heartiness. Stir in the heavy cream or half-and-half and simmer a few more minutes. Season with salt and pepper to taste.
- Serve Warm with Garnishes: Ladle the soup into bowls and garnish with fresh green onions, a sprinkle of Parmesan cheese, or a dash of hot sauce if desired. Serve immediately for best flavor.
Notes
- Choose Russet or Yukon Gold potatoes for the best creamy texture.
- Do not over-blend; leaving some potato chunks adds texture and rustic appeal.
- Browning the sausage properly enhances depth and umami flavors.
- Use fresh Cajun seasoning or prepare your own for the most vibrant taste.
- Add cayenne pepper gradually to control the spiciness to your preference.
