Description

Broccolini Au Gratin is a deliciously creamy and cheesy baked side dish that combines tender broccolini with a smooth, rich cheese sauce topped with a golden breadcrumb crust. Ready in under 30 minutes, this comforting recipe elevates simple greens into a gourmet delight that pairs well with a variety of main courses and is perfect for weeknights or special occasions.

Ingredients

Scale

Vegetables

  • 12 oz fresh broccolini, trimmed

Sauce

  • 3 tbsp unsalted butter
  • 3 tbsp all-purpose flour (or gluten-free flour for gluten-free version)
  • 2 cups milk or cream (use full-fat for extra creaminess)
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup parmesan cheese, grated (plus extra for topping)
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste

Topping

  • 1/2 cup breadcrumbs (use gluten-free breadcrumbs if needed)

Instructions

  1. Prepare the Broccolini: Trim the ends of your broccolini and rinse thoroughly. Lightly blanch in boiling water for 2 to 3 minutes until just tender yet still bright green. Drain well and set aside to preserve color and texture.
  2. Make the Cheese Sauce: In a medium saucepan, melt the butter over medium heat. Stir in flour to form a paste and cook for about one minute, avoiding browning. Gradually whisk in milk or cream, stirring constantly until the sauce thickens smoothly. Remove from heat and stir in shredded cheddar, parmesan, garlic powder, salt, and pepper until melted and creamy.
  3. Assemble the Dish: Arrange the blanched broccolini evenly in a baking dish. Pour the cheese sauce over the broccolini, making sure all stalks are well coated.
  4. Add Topping and Bake: Sprinkle breadcrumbs and additional parmesan cheese on top to form a crunchy golden crust. Bake in a preheated oven at 375°F (190°C) for 15 to 20 minutes, or until bubbly and golden brown on top.
  5. Serve Warm: Remove from the oven and allow to rest for a few minutes so the sauce can set slightly. Serve warm as a comforting and cheesy side dish.

Notes

  • Do not overcook the broccolini; blanch just until tender to keep some crunch and vibrant color.
  • Use sharp cheddar cheese for a flavorful and melty sauce.
  • Whisk constantly when adding milk to avoid lumps in the sauce.
  • Distribute breadcrumbs evenly for consistent crispiness on top.
  • Let the dish rest a few minutes after baking for easier serving and better texture.
