Ingredients

Scale

Blueberry Swirl Ingredients

  • 1 cup fresh blueberries
  • 1 tablespoon lemon juice
  • 1 to 2 teaspoons honey or maple syrup

Yogurt Base Ingredients

  • 1 cup plain or vanilla Greek yogurt
  • 1 teaspoon vanilla extract
  • Optional: additional sweetener (honey or maple syrup) to taste

Instructions

  1. Prepare the Blueberry Swirl: In a small saucepan, combine 1 cup fresh blueberries, 1 tablespoon lemon juice, and 1 to 2 teaspoons honey or maple syrup. Cook over medium heat until the blueberries soften and release their juices, forming a thick, syrupy swirl. Remove from heat and set aside to cool completely.
  2. Mix the Yogurt Base: In a bowl, combine 1 cup Greek yogurt with 1 teaspoon vanilla extract and additional sweetener if desired. Stir well until the mixture is smooth and creamy.
  3. Layer the Yogurt and Blueberry Swirl: Using silicone mold trays or ice cube trays, spoon a layer of the yogurt base into each mold. Add a dollop of the cooled blueberry swirl on top. Use a toothpick or skewer to gently swirl the blueberry mixture into the yogurt, creating a marbled effect without overmixing.
  4. Freeze Until Firm: Place the trays in the freezer and let the bites set for at least 3 to 4 hours, or until completely frozen and firm.
  5. Pop Out and Enjoy: Once frozen, carefully remove the Blueberry Swirl Yogurt Bites from the molds. Store them in an airtight container in the freezer and enjoy as a refreshing, healthy snack whenever desired.

Notes

  • Choose thick yogurt for creamier bites that hold their shape better.
  • Swirl gently to preserve the beautiful marbled appearance.
  • Use silicone molds for easy removal without breaking the bites.
  • Allow the blueberry swirl to cool fully before layering to keep distinct layers.
  • Freeze thoroughly before removing the bites to avoid sogginess.
