Description

Bang Bang Chicken Bites are crispy, tender chicken pieces coated in a light, crunchy batter and tossed in a creamy, spicy sauce. This quick and easy appetizer is perfect for parties, game days, or casual snacking, with a customizable spice level to suit every palate.

Ingredients

Scale

Chicken

  • 1 lb chicken breasts or thighs, cut into bite-sized pieces
  • Salt, to taste
  • Black pepper, to taste
  • 1/2 teaspoon garlic powder

Breading

  • 1/2 cup all-purpose flour (or rice flour for gluten-free)
  • 1/2 cup cornstarch
  • 2 large eggs, beaten

Bang Bang Sauce

  • 1/2 cup mayonnaise
  • 23 tablespoons sriracha or preferred chili sauce (adjust for desired spice)
  • 1 tablespoon honey or sugar
  • 1/2 teaspoon garlic powder
  • 1 tablespoon fresh lime juice

For Frying

  • Vegetable oil, for frying (enough to fill pan about 2 inches deep)

Instructions

  1. Prepare the Chicken: Cut chicken breasts or thighs into uniform bite-sized pieces. Season lightly with salt, pepper, and garlic powder for flavor.
  2. Set Up the Breading Station: In one bowl, combine flour and cornstarch. In another bowl, beat the eggs. Dip each chicken piece first into the egg, then thoroughly coat with the flour-cornstarch mixture, pressing gently to ensure the coating sticks well.
  3. Fry the Chicken: Heat oil in a deep pan or fryer to 350°F (175°C). Fry the coated chicken pieces in batches without overcrowding, cooking 3-4 minutes per batch until golden brown and cooked through. Drain on paper towels to remove excess oil.
  4. Make the Bang Bang Sauce: In a bowl, whisk together mayonnaise, sriracha or chili sauce, honey or sugar, garlic powder, and fresh lime juice until smooth and creamy. Adjust the spice and sweetness to taste.
  5. Toss and Serve: Place fried chicken bites in a large bowl and pour the bang bang sauce over them. Toss gently until all pieces are evenly coated. Serve immediately for best texture and flavor.

Notes

  • Pat chicken pieces dry before breading to help coating stick better.
  • Maintain oil temperature at 350°F to avoid greasy or undercooked bites.
  • Use a thin, even coating for crispier results; avoid overloading batter.
  • Prepare the sauce fresh before serving to keep it creamy and flavorful.
  • Fry chicken in small batches to keep oil temperature steady and chicken crispy.
