Ingredients
Scale
Chicken
- 1 lb chicken breasts or thighs, cut into bite-sized pieces
- Salt, to taste
- Black pepper, to taste
- 1/2 teaspoon garlic powder
Breading
- 1/2 cup all-purpose flour (or rice flour for gluten-free)
- 1/2 cup cornstarch
- 2 large eggs, beaten
Bang Bang Sauce
- 1/2 cup mayonnaise
- 2–3 tablespoons sriracha or preferred chili sauce (adjust for desired spice)
- 1 tablespoon honey or sugar
- 1/2 teaspoon garlic powder
- 1 tablespoon fresh lime juice
For Frying
- Vegetable oil, for frying (enough to fill pan about 2 inches deep)
Instructions
- Prepare the Chicken: Cut chicken breasts or thighs into uniform bite-sized pieces. Season lightly with salt, pepper, and garlic powder for flavor.
- Set Up the Breading Station: In one bowl, combine flour and cornstarch. In another bowl, beat the eggs. Dip each chicken piece first into the egg, then thoroughly coat with the flour-cornstarch mixture, pressing gently to ensure the coating sticks well.
- Fry the Chicken: Heat oil in a deep pan or fryer to 350°F (175°C). Fry the coated chicken pieces in batches without overcrowding, cooking 3-4 minutes per batch until golden brown and cooked through. Drain on paper towels to remove excess oil.
- Make the Bang Bang Sauce: In a bowl, whisk together mayonnaise, sriracha or chili sauce, honey or sugar, garlic powder, and fresh lime juice until smooth and creamy. Adjust the spice and sweetness to taste.
- Toss and Serve: Place fried chicken bites in a large bowl and pour the bang bang sauce over them. Toss gently until all pieces are evenly coated. Serve immediately for best texture and flavor.
Notes
- Pat chicken pieces dry before breading to help coating stick better.
- Maintain oil temperature at 350°F to avoid greasy or undercooked bites.
- Use a thin, even coating for crispier results; avoid overloading batter.
- Prepare the sauce fresh before serving to keep it creamy and flavorful.
- Fry chicken in small batches to keep oil temperature steady and chicken crispy.
